Characteristics and applications
Aspartame (or Aspartylphenylalanine) is the methyl ester of the dipeptide aspartyl phenylalanine. Chemically, it is Succinamic acid, 3-amino-N-(alpha- carboxyphenethyl)-, N-methyl ester, stereoisomer. Aspartame is prepared by components of amino acids, aspartic acid and phenylalanine, with a small amount of methanol. It's marketed names are NutraSweet, Equal, Egal, or Canderal. Aspartame is a low-calorie sweetener used to sweeten a variety of foods and beverages, and as a tabletop sweetener. Aspartame is about 150-200 times as sweet as sucrose, tastes good, enhances flavors, saves calories and does not contribute to tooth decay. it is now the most popular sweetening ingredient in diet soft drinks. Aspartame trends to separate components when heated or over long periods, resulting in a loss of sweetness.
